Starting last week, Karuna Inc., a pioneer in plant-based cuisine that are “Kind to the body, joy to the heart”, has launched a line of frozen vegan sushi, available on its e-commerce platform. This new offering, certified by the Japan Vegan Association, promises a guilt-free indulgence without the use of any animal or seafood ingredients.
Karuna Inc. utilizes freezing technology to extend the shelf life of their popular in-store dishes, making them accessible online. These frozen delights are designed for convenience, offering a quick, waste-reducing meal option that retains the taste and quality of freshly made sushi.
The lineup features three varieties, including “Eggplant and Fresh Yuba Battera Sushi,” “Yuba and Tofu Seared Kabayaki Sushi,” and a “Shojin Thick Roll Sushi,” all made with specially cultivated rice, fresh vegetables, and domestic soy products like yuba and tofu. Free from synthetic additives, these dishes are preserved using proton freezing, a technique that maintains the texture of the rice and the flavors of the ingredients.
The introduction of frozen vegan sushi addresses the growing concern of food loss, particularly highlighted by the recent boom in ehomaki (sushi rolls eaten on Setsubun), where excess waste from unsold products has become an issue. Karuna’s vegan sushi, with its freeze-and-eat convenience, offers a sustainable solution, allowing consumers to enjoy sushi at their preferred time while minimizing waste.
The launch of this product line marks a significant step towards sustainable eating practices, combining the convenience of frozen food with the ethical and health benefits of a vegan diet.
