Gateway to Sustainability in Japan

TABESUS brings upcycled gourmet to Futako-Tamagawa

Futako-Tamagawa Rise, an integrated commercial facility at the Tokyu Den-en-toshi and Oimachi Lines’ Futako-Tamagawa Station, is making waves with the opening of its gourmet kitchen car, TABESUS. Opened in mid-April, this unique venture is the first of its kind at Futako-Tamagawa Rise, offering eco-friendly dining options to its patrons.

A testament to the power of collective action, the Tokyu Line area has embraced the Sustainable Development Goals (SDGs), with one in every two residents engaging in efforts that contribute to the global initiative. Recognizing the potential to foster a more circular society, Futako-Tamagawa Rise has embraced TABESUS as a platform to encourage customers to integrate sustainable habits into their everyday lives.

Positioned in the bustling Ribbon Street area, connecting Futako-Tamagawa Station and Futako-Tamagawa Park, TABESUS is set to entice shoppers, office workers, and local residents alike. Combining accessibility and sustainability, the kitchen car offers affordable one-handed menu options priced between 400-500 yen per item, with lunchtime sets, including drinks, available for 900-1,000 yen. The result? A seamless integration of sustainable practices into the daily routines of countless individuals.

From April to June, TABESUS will focus on the pressing issue of food loss, offering upcycled gourmet dishes made from previously discarded, non-standard vegetables and trimmings. With Japan’s annual per capita egg consumption at a staggering 337 eggs, the nation faces the challenge of effectively utilizing parent birds that have completed their egg-laying cycles. In a bold move, TABESUS has chosen to source “parent birds” from an egg producer in Chiba Prefecture’s Isumi City, where chicken welfare is prioritized. By incorporating okara, a typically discarded byproduct, the kitchen car creates tender, juicy chicken nuggets and mini chicken burgers, transforming waste into delectable, eco-friendly meals.
