“Hakuba Happo Yamabuki Shokudo,” a new restaurant promoting food culture is coming to the Hakuba Happo area, produced by Yamabuki Miso Group. It is set to open next week on December 20. The establishment represents a complete transformation of the dining hall at Hakuba Marukin Ryokan, the largest accommodation facility in the district, into a venue that celebrates the richness of Shinshu miso.
The restaurant aims to serve diverse dining needs, from showcasing the local food culture to addressing the growing number of international tourists and a regional shortage of dining options. It will also cater to the increasing demand for “separation of accommodation and dining,” providing visitors with an opportunity to enjoy meals outside their lodging.

By revitalising the dining facility within a flagship lodging and integrating expert culinary practices, the restaurant seeks to not only meet its own guests’ expectations but also attract diners from across the area. “Hakuba Happo Yamabuki Shokudo” also offers an accessible introduction to Japan’s fermentation culture. Miso, a cornerstone of Japan’s culinary heritage, has been cultivated over centuries, with Shinshu Miso’s “Yamabuki Miso” representing over 350 years of tradition. The distinctive flavour of Yamabuki Miso is attributed to the cold winters and dry climate of Komoro, along with the mineral-rich waters of the Asama Mountain range, which create ideal conditions for slow fermentation.
The restaurant’s menu will highlight the versatility of Yamabuki Miso through a variety of dishes, delivering a dining experience that blends traditional craftsmanship, enhances the region’s appeal, and connects guests with Hakuba Happo’s forests and fields.
