GOOD CACAO Series: from cacao husks to gourmet treats

GOOD NATURE STATION has been busy with new food upcycling projects, finding new value in food!

Their latest GOOD CACAO Series is all about turning what would be waste into something worth savouring. By utilising cacao husks, the discarded outer shells of cacao beans, the series transforms waste into delicious and sustainable products. These husks, which account for approximately 30% of the cacao bean, possess a rich aroma and robust flavour, making them a valuable ingredient rather than mere waste. They are also buying cacao directly from farmers at fair prices, supporting better working conditions and helping preserve the environment in cacao-producing regions.

Building on this commitment to reducing food waste, GOOD NATURE STATION has introduced an addition to the GOOD CACAO Series. The “Thinned Apple Madeleines Pairing with Japanese Tea” are a delightful creation that further embodies their mission of sustainability. These madeleines use thinned apples, which are traditionally discarded during the apple-growing process to ensure the remaining fruit grows larger. By incorporating these small apples into the recipe, the madeleines offer a refreshing tartness with a hint of bitterness that complements the depth of the cacao.

Whey, another typically discarded byproduct of dairy production, is also used in the madeleines. Sourced from Kyoto’s Miyama Milk, the whey adds a moist and fluffy texture to the baked goods, enhancing their richness. Additionally, the cacao husks are finely ground into a powder and blended into the dough, further enhancing the madeleines’ robust flavour.

This product is the result of a collaboration with students from Ryukoku University’s Fujioka Seminar, who share a passion for sustainability. Their insights in market research and promotion played a crucial role in bringing the Thinned Apple Madeleines to life. Through partnerships like this, GOOD NATURE STATION will continue to innovate in the realm of sustainable food production.
