The Ethical Spirits & Co., a pioneer in sustainable distillery practices, has unveiled its latest creation, “LAST ELYSIUM,” an addition to its acclaimed “LAST” line of ethical gins. This new offering emphasizes the company’s commitment to reducing waste and carbon emissions by repurposing underutilized materials like sake lees in its production process.
Launched last month, “LAST ELYSIUM” can be purchased at their official online store, the Tokyo Riverside Distillery in Taito, Tokyo, and at select outlets including the Bar & Dining “Stage by The Ethical Spirits & Co.” The product is launched in two consumer-friendly sizes, 200ml and 375ml, and introduces a 700ml bottle for business clients, marking the brand’s first foray into the commercial market.
The introduction of “LAST ELYSIUM” aligns with the company’s broader mission to foster a circular economy within the distilling industry. By utilizing about 21 tons of sake lees, a by-product of sake production that would otherwise be discarded, The Ethical Spirits & Co. has successfully cut down CO2 emissions by approximately 5.2 tons. This innovative approach not only elevates a by-product to a premium gin but also sets a precedent for sustainable production practices in the spirits industry.
“LAST,” known for its rich botanical flavors and described as “like drinking perfume,” has received numerous accolades for its quality and sustainability, including the highest national award in the World Gin Awards 2021 gin category and the GOLD OUTSTANDING award at IWSC 2021 in the UK.
