New vegan Soy Milk Okara Cookies upcycles tofu byproducts

MD Holdings, Inc., in partnership with Kyoto Tofu Fujino Co., Ltd., has unveiled a new product line that transforms tofu byproducts into a delightful snack. The companies announced the launch of “Soy Milk Okara Cookies Plain” and “Soy Milk Okara Cookies Peanut,” available nationwide starting today.

This collaboration brings to the forefront the concept of upcycling in the food industry, turning what would have been waste – okara (soy pulp) and leftover soy milk from tofu and yuba (tofu skin) production – into environmentally friendly cookies. Kyoto Tofu Fujino, marking its 60th anniversary this year, has long been a proponent of using high-quality, locally sourced soybeans and pristine Kyoto water to craft its tofu and yuba, making it a fitting partner for this eco-friendly endeavor.
