Vegan Visai Ramen opens second plant based shop in Takayama

Vegan ramen shop Vegan Visai Ramen has opened a second branch in Takayama, Gifu Prefecture.  The second shop contributes to alleviating the limited availability of vegan dining options for domestic and international travellers visiting regional Japan, highlighted the scarcity of plant-based meals in the area.

The evening menu centres on two plant-based noodle dishes alongside multi-course offerings. The Mori no Chintan ramen combines a clear stock made from mushrooms and vegetables with soy sauce and flavoured oil, while the Satoyama Tantan ramen features a miso base layered with sesame, nuts, Sichuan pepper and chilli oil. Single bowls are priced at 2,500 yen, with set courses ranging from 2,800 yen to 6,800 yen.

“We want to increase the number of places in Takayama where vegans and non-vegans alike can enjoy ramen together, making the search for food during travel part of the enjoyment,” said Shinichi Kato, representative director of Creative Resort. The company plans to establish the new location as a regular evening dining option for visitors exploring the city.

The new branch will operate between 17:00 and 22:00, compared to the initial outlet operates as a daytime establishment between 11:00 and 17:00.
