Tokyo Riverside Distillery, part of The Ethical Spirits, continues transforming production waste into assets with its latest craft gin, Distiller’s CUT vol.2 “Botanica Bloom.” This limited-run product repurposes distillation leftovers—known as “heads” and “tails”—into a blend featuring citrus and spice botanicals. The process significantly reduces waste, while awarding us with a distinctive gin that appeals to both enthusiasts and newcomers alike.
Founded in 2020, Ethical Spirits Co has become a leader in sustainability within Japan’s spirits sector, championing circular economy principles by reusing distillation by-products. Its earlier offerings, LAST and REVIVE, similarly repurpose leftovers from sake and beer production.
Distiller’s CUT vol.2 “Botanica Bloom” combines botanicals such as lemon and yuzu, paired with aromatic spices, producing a gin noted for its citrusy aroma and subtle, soda-like freshness. Available exclusively through the distillery’s official store and its adjacent Bar & Dining establishment, the product features visually striking label art by local studio 038design.
The company’s innovative approach has earned international recognition, including awards at the World Gin Awards 2021 and IWSC 2021.
