Backed by the Nippon Foundation’s “Umi to Nihon Project,” “THE BLUE CAMP” serves as an educational and experiential initiative designed to immerse young participants in the world of sustainable seafood and ocean conservation. In its second year, the program welcomed 15 selected students from Tokyo and Kyoto, spanning high school, university, and vocational institutions. Guided by four top chefs from these cities, the students explored the complexities of marine sustainability through a blend of academic instruction and hands-on activities.

Over three months, the students engaged with real-world issues, studying the challenges of the fishing industry and the environmental impact of seafood consumption. As a culmination of their learning, they launched a temporary restaurant in August 2024, where they applied their knowledge to create a dining experience that embodied sustainable practices. This final showcase not only reflected their growth but also underscored the vital connection between ocean conservation and food culture, demonstrating that sustainable seafood can be both responsible and delicious.
