Kamikatsu brewery KAMIKATZ TAPROOM reopens circular taproom

RISE & WIN Brewing Co., a craft brewery originating from Japan’s first zero-waste town, Kamikatsu, reopens its Tokyo flagship restaurant after renovations, introducing a new menu and a fully circular beer that transforms brewing waste into its own core ingredient.

The KAMIKATZ TAPROOM in Higashi-Azabu will relaunch for the brewery’s 10th anniversary under the new theme, “Local Roots, Urban Table.” The establishment will now function as a beer restaurant pairing its craft beers with Italian cuisine that heavily features ingredients from Tokushima and the wider Shikoku region.

Following the commitment to the zero-waste principles of its hometown, Kamikatsu, the brewery has established a circular system for its new “reRise” initiative. Malt lees from the brewing process and food scraps from the taproom are composted to create a liquid fertiliser. This fertiliser is then used to cultivate vegetables and barley on farms in and near Kamikatsu.

This “reRise barley” is the key ingredient in the brewery’s new anniversary beer, the “reRise IPA 2025,” which will be available for a pre-release sale at the reopening. The beer is described as the culmination of the company’s resource circulation efforts, creating a closed loop where waste from one beer becomes the foundation for the next. The IPA has a tropical aroma with a dry, crisp finish.

The new food menu, supervised by Chef Hyo-hara Taira of the Kamikatsu-based auberge PERTORNARE, was designed to be paired with the brewery’s eight draft beers. It will incorporate the “reRise vegetables” grown through the same circular farming system. The taproom will also introduce a composting system for its kitchen waste, further reducing its environmental footprint.

The brewery’s philosophy is rooted in its origins. The taproom’s interior, designed by Nakamura & NAP, already utilises reclaimed materials and repurposed furniture, reflecting the zero-waste ethos.
